Eggs Lorraine

A really quick and easy breakfast dish I like to prepare is Eggs Lorraine. I'm always in a hurry in the mornings to get to class on time so this dish is perfect for a hectic morning because you just layer the ingredients on top of each other. This dish is by Taste of Home and I swapped out the bacon and cheese for the types I prefer.

Ingredients:
4 Slices Canadian Bacon ( I used Applewood Bacon)
2 Slices Swiss Chess (I used American)
4 Eggs ( I used only two since I only made a single serving)
1/8 Teaspoon Salt
1/8 Teaspoon Pepper
Optional: Chives, Minced

Directions:
  1. Coat two shallow oval 1-1/2-cup baking dishes with cooking spray. ( I only used one oval baking dish) Line with Canadian bacon ; top with cheese. Carefully break two eggs into each dish.
  2. In a small bowl, whisk sour cream, salt and pepper until smooth; drop by teaspoonfuls onto eggs.
  3. Bake, uncovered, at 350° for 25-30 minutes or until eggs are completely set. Sprinkle with chives if desired. Yield: 2 servings.


This dish goes great with a cup of coffee or tea and it's such a tasty and easy-to-do dish everybody will enjoy.
